Roasted Zucchini
(from the ladies in the 2006 Inwood lunch bunch)

Ingredients:
• zucchini sliced thick diagonally
• olive oil
• fresh-pressed garlic
• Italian seasoning

Mix everything together in a secure zip-loc bag, shake-n-bake style. Cover a cookie sheet with foil and coat with olive oil and salt. Place the slices of zucchini doused in oil and spices on the cookie sheet in a single layer. Bake at 400 degrees on top rack of oven for 40-45 minutes until zucchini starts to shrink and brown. Even the thickest slice should be soft and not at all crunchy.

Serving ideas: as a side dish, with tomato sauce over pasta, on pizza
