Noodle
Kugel
(My grandma=s recipe from Austria, as best as I can remember it)
Ingredients:
1 16-oz package or extra-long
or extra-wide egg noodles
1 stick (1/2 cup) margarine
1 - 1-1/3 cups raisins, soaked in warm water
4 apples, peeled and chopped
(macintosh are best)
2 tsp. cinnamon
4 eggs
1 cup sugar
Directions:
Cook noodles with salt and
oil, drain, and coat with margarine. Add raisins (drained) and apples. Combine
cinnamon with egg yolks and add mixture to noodles. Beat egg whites until
frothy, add 1 cup sugar, and add mixture to noodles. Grease large casserole
dish and add noodles. Cover and bake at 350 degrees until brown on
edges, about 40 minutes to an hour.
