Mint Sticks
(I got this recipe from Karen Harmon who is now
married to Wayne Collier)
Ingredients:
Brownies:
6 beaten eggs
3 cups sugar
1-1/2 tsp. peppermint flavoring
6 ounces "Bakers"
unsweetened chocolate
3 sticks of margarine (not
butter)
2-1/4 cups flour
3/4 cups chopped nuts (optional)
Frosting:
1-1/2 sticks margarine (melted)
5-6 cups powdered sugar
1-1/2 tsp. peppermint flavoring
3-6 tbsp. of milk
(I usually also add a little
bit of blue coloring to make the yellowish frosting into a pale green.)
Directions:
Brownies:
Melt margarine and chocolate
together. In a large bowl beat eggs, add sugar, chocolate, flavoring and nuts.
Beat with a mixer. Add flour and stir with large wooden spoon. Pour into a
greased and floured pan (about 13" x 18" - and deeper than your normal
cookie sheet). Bake at 350 degrees for 25 min. Take out and
put in freezer for at least 1/2 hour. (The
frosting is much easier to spread if the "brownie" layer is frozen.)
Frosting:
Mix frosting together, use a
food processor if you can.
Take out frozen bottom,
spread frosting on, working quickly - it freezes pretty fast. Melt half an
ounce of unsweetened or bittersweet chocolate and some margarine and drizzle on top.
