Couscous
Fruit Salad
(Great for
breakfast, brunch, or a summer afternoon snack)
Ingredients:
1-1/2 cups water
1 cup low-fat milk
1/8 tsp salt
1 cup couscous
3 tbsp granulated sugar
1 tbsp unsalted margarine
1 small ripe mango, peeled,
seeded and cut into 1-inch chunks
1 cup sliced strawberries
1 cup seedless green grapes,
halved
2 tbsp chopped fresh mint
1 tbsp fresh lemon juice
1/2 tsp ground cinnamon
Directions:
In a medium saucepan, combine
water, milk, and salt. Bring mixture to a boil over medium-high heat. Remove
from heat. Stir in couscous. Let stand, covered, until liquid is absorbed,
about 5 minutes. Stir in sugar and margarine. Fluff couscous mixture with a
fork.
Place couscous mixture in a
large bowl. Add mango, strawberries, grapes, mint, lemon juice, and cinnamon;
toss to combine. Serve warm or chill for 30 minutes.
