Chinese-Style Chicken Salad
(From my former neighbor and 3rd-ward
member, Mary Irvine)
Ingredients:
cabbage
chicken
butter (or margarine)
lemon pepper
almond slivers (the thick
chunky kind - not the thin slices)
sesame seeds
lemon juice
soy sauce
vinegar (rice vinegar is
best)
sugar
oil (peanut oil is best)
chow mein noodles
Directions:
Shred as much cabbage as you
need really small.
Saute bite-sized chicken
chunks in butter and lemon pepper.
Brown the almonds in a pan on
the stove or in the oven.
Brown the sesame seeds in a
pan on the stove or in the oven. (Be aware that they take less time than the
almonds, so don't try doing them together.)
Make the dressing by mixing
equal portions (1-2 tablespoons of each, depending on how much ingredients you
have) of lemon juice, soy sauce, vinegar, sugar, and oil.
Mix everything together and
sprinkle the chow mein noodles on top. (Don't mix them in because they get
soggy.)
