Blueberry Sauce

                                          (Good on pound cake, blintzes, ice cream, etc.)

 

Ingredients:

1/4 cup granulated sugar

1 tbsp + 1 tsp cornstarch

2 packages (12 oz. each) frozen, thawed blueberries or 3 cups fresh blueberries

1 tsp grated lemon peel

 

Directions:

In a medium saucepan, combine sugar and cornstarch. Mix well. Stir in blueberries and lemon peel. Cook over medium heat, stirring constantly, until mixture thickens and boils, about 3 minutes. Remove from heat. Pour berry mixture into a medium bowl; cool completely.
